Cheesecake with Berry Topping 🍰🍓:
2 cups graham cracker crumbs
½ cup melted butter
¼ cup sugar
Pinch of salt
Filling:
4 (8 oz) cream cheese packages, softened
1¼ cups sugar
4 large eggs
⅓ cup heavy cream
1 tbsp vanilla extract
¼ tsp salt
Berry Topping:
2 cups mixed berries
½ cup sugar
2 tbsp water
1 tbsp cornstarch
1 tbsp lemon juice
Instructions
Crust: Mix crumbs, butter, sugar, and salt. Press into a 9-inch pan. Bake at 325°F for 10 min. Cool.
Filling: Beat cream cheese with sugar, add eggs, cream, vanilla, and salt. Pour over crust.
Bake: 325°F for 60-70 min. Cool 1 hour, then chill 4+ hours.
Topping: Simmer berries, sugar, and water. Add cornstarch slurry, cook until thick. Stir in lemon juice, cool.
Serve: Top cheesecake with berry sauce
