Easy Mealie Meal Muffins
What you need:
1 cup mealie meal (maize meal)
1 cup all-purpose flour
¼ cup sugar (or less if you like it less sweet)
2 tsp baking powder
½ tsp salt
1 cup milk
¼ cup vegetable oil or melted butter
2 eggs
Optional extras: ½ cup grated cheese or sweetcorn kernels
How to make it:
Preheat your oven to 180°C (350°F). Get your muffin tray ready by greasing it or lining with paper cases.
In a big bowl, whisk together the dry stuff: mealie meal, flour, sugar, baking powder, and salt.
In another bowl, beat the milk, eggs, and oil or butter until smooth.
Pour the wet mix into the dry mix, then stir just until everything’s combined — don’t overdo it!
Fold in cheese or sweetcorn if you’re adding them.
Spoon the batter into your muffin tray, filling each cup about ¾ full.
Bake for 20–25 minutes or until golden on top and a toothpick comes out clean.
Let the muffins cool a bit before digging in. Perfect for breakfast, snacks, or anytime you want a tasty treat!
