🛒Ingredients
For the Gordita Shells:
2 cups masa harina (corn flour)
1 1/4 cups warm water
1/4 teaspoon salt
Oil for frying
For the Filling:
1 pound ground beef
2 medium potatoes, peeled and diced into small cubes
1/2 onion, finely diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon oregano
Salt and pepper to taste
1/4 cup water or beef broth
Toppings:
Shredded lettuce
Diced tomatoes
Shredded cheese (cheddar or Mexican blend)

1. Make the Gordita Dough:
In a bowl, combine masa harina, salt, and warm water.
Knead until a smooth dough forms. It should feel like playdough – not too dry or sticky.
Divide into 8 equal balls. Flatten each ball into a 1/4-inch thick disc.
2. Cook the Gordita Shells:
Heat oil in a deep skillet to 350°F (175°C).
Fry each disc for about 1–2 minutes per side until golden and puffy. Drain on paper towels.
3. Prepare the Filling:
In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
Add onions and garlic. Cook until softened.
Stir in diced potatoes, spices, and broth. Cover and simmer for 10–15 minutes, or until the potatoes are tender.
Adjust seasoning with salt and pepper.
4. Assemble the Gorditas:
Slice each gordita halfway open, creating a pocket.
Stuff with the beef and potato mixture.
Add toppings like lettuce, tomatoes, cheese, sour cream, and salsa.
